I’m going to go ahead and say this out loud…the hardest part of living alone with my husband is having to feed us. I’m constantly stressed about what to make and should we eat healthy or does it really matter. I’m not a fan of eating out, it just doesn't make me feel good.
Living back at home gave me the privilege of having breakfast and lunch ready to take with me to work and I almost always go home for dinner. Trying to continue doing that after marriage is challenging. I really don't want to come off as being spoilt but it feels like I’m either stressing about what I can make or stressing about whether it’ll be good (or edible!).
My amazing friend May (also known as Mayoosh262 on snapchat…yes go on and follow her) made the most delicious salad one night and she generously shared her recipe. And now i’m sharing it with you after all the teasing on my snapchat.
Low Fat Feta cheese
Half a Lemon
3 Tbs Olive Oil
4 Tbs Pomegranate Molasses
1/4 Tsp Salt
1/2 Tsp Dry Mint
I prepare all the salad ingredients in a large bowl and try and make enough for four servings. and separately mix the dressing ingredients. If you know me you’ll know I’m not a fan of mushrooms or bell peppers so I skip them and add spinach instead.
A tip about salad that I recently discovered, never mix the dressing in until you're ready to have the salad - I honestly didn't know! i left a salad overnight (with its dressing- took it to work and threw it out immediately.
